Ingredients
- 1 ¼ cups green lentils
- 1 red onion, diced
- 1 white onion, diced
- 1 sweet potato, diced
- 2 red bell peppers, diced
- 2 Tbsp garlic, minced
- 2 Tbsp olive oil
- 6 cups vegetable stock
- 2 tsp onion powder
- 2 tsp cumin
- Salt to taste
- Black pepper to taste
Directions
- Pour oil into pot over low heat.
- Add diced vegetables, minced garlic. Cook until onions are translucent.
- Add lentils and seasoning, cook until mixture is fairly dry, stirring frequently.
- Add vegetable stock, bring to boil and simmer for about 1 hour.
- Adjust seasoning to taste.
