The recipe for this tasty pierogi comes to us from our friends at the East End Food Co-op in Pittsburgh, Pennsylvania!

Ingredients
Dough
- 2 cups flour
- 1 egg
- 1 tsp salt
- 2 Tbsp olive oil
- ¼ cup warm water (may need up to 1/2 cup water)
Filling Ideas:
- Cheesy mashed potatoes
- Sauerkraut/Caramelized onions
- Minced meat/Mushrooms
- Sundried tomato/Lentils
Directions
- Using a fork mix together flour, salt, egg and oil. Slowly add in ¼ cup of water until a ball forms. Knead on a lightly floured surface until smooth. Cover and refrigerate for 30 minutes.
- While dough rests, prepare and gather the fillings. After dough has chilled, cut in half and roll to about ¼-inch thick. Use a cup to cut out 8-10 circles.
- Place a teaspoon of filling in the center of each circle. Fold over, seal with a little water and a pinch. Use a fork to crimp closed.
- Add dumplings to boiling water, they will float to the top when ready. If you want to pan fry, heat skillet with 1 tablespoon of butter and cook until sides are golden brown.
