Roast Prime Rib with Au Jus

Out-standing Rib Roast!

Ingredients

  • 1 bone-in prime rib (3 ribs or 6-8 lbs)
  • 8 cloves garlic, thinly sliced
  • Salt and coarsely ground pepper
  • 2 cups red wine
  • 4 cups beef stock
  • 1 Tbsp fresh chopped thyme

Directions

  1. 30 minutes to an hour before roasting, remove from the refrigerator and let come to room temperature. Preheat oven to 350°.
  2. Make small slits all over the prime rib and fill each one with a slice of garlic. Season liberally with salt and coarse pepper.
  3. Place on a rack inside a roasting pan and roast for 1 ½ – 2 hours until medium rare, about 125°. Use a meat thermometer in the center of the roast to check your temperature at the 90-minute mark. Remove meat to a platter and tent with foil to keep warm.
  4. To make the au jus, place roasting pan on top of stove over two burners set to medium-high to high heat. Add wine to pan drippings and cook until the wine has reduced, scraping the pan with a wooden spoon. Add stock and cook until reduced by half. Whisk in the thyme and season with salt and pepper to taste.
  5. Slice meat as desired and serve with au jus.
