Easy Roasted Shrimp Cocktail

Don’t be intimidated by DIY shrimp cocktail. No steaming necessary. This simple roasting method takes just a few minutes (plus the cooling time) and you’ve got the freshest, tastiest New Year’s appetizer that is sure to be the belle of the ball drop. (So much better than the pre-cooked frozen kind!) Recipe credit goes to Ina Garten, who is the pro at party tricks. 

Ingredients

  • 2 pounds shrimp, peeled and deveined (we like Marativa) 
  • 2 Tbsp extra virgin olive oil  
  • ½ tsp sea salt 
  • ¾ tsp freshly ground pepper  

Directions

  1. Preheat oven to 400°. Lay shrimp on a parchment-lined baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast 8-10 minutes. Set aside to cool, then refrigerate until ready to use. 
  2. Use your favorite cocktail sauce or doll up a store bought one to taste – add lemon juice, horseradish or additional Worcestershire as desired, depending on how sweet, spicy or umami you prefer it.
