Easy Leftover Chicken Soup

Nothing is more comforting than a bowl of homemade chicken soup. And, you don’t have to wait until you’re sick to enjoy it!

Made with bone broth, this recipe is good for body and soul! Bone broth dates back to prehistoric times, when hunter-gatherers turned otherwise inedible animal parts like bones, hooves, and knuckles into a nourishing broth they could drink.

Bone broth is rich in minerals that help build and strengthen your bones. It also contains many other healthy nutrients, including vitamins, amino acids, and essential fatty acids. It’s delicious, too!

Grab a rotisserie chicken or use leftovers. Hearty, nourishing and perfect for a busy week night.

Ingredients

  • 8 cups bone broth 
  • 3 cups cooked chicken, shredded  
  • 1 onion, chopped  
  • 1 celery, chopped  
  • 2 carrots, chopped  
  • 1 cup dry white wine  
  • 1 clove garlic, diced  
  • 1 tsp dried oregano  
  • 1 tsp dried thyme  
  • 1 lemon, cut in half  
  • Salt & pepper to taste  
  • 1 cup cooked rice or pasta  

Directions

  1. Add all ingredients, except for rice or pasta to a large stock pot. Let simmer at least one hour, covered. Discard lemon. Add rice or pasta when ready to serve. Voila!
