For most of the year, all of the cabbage used for Local Culture sauerkraut is grown locally by Super Tuber Farm.

“Being sustainable is important to us and we compost all of our kitchen scraps from our ferment production. Ferments absorb toxins leached from plastic, so we never use plastic for fermentation or packaging. We also believe there is enough plastic out there in the world and we don’t need to add to it!
We ferment in stainless steel fermenters for a minimum of 4 weeks, to ensure the full spectrum of beneficial microbes and probiotics. This creates and results in a higher nutritional value. Each and every jar is hand-packed with love,” said Elissa.
The business is located in a warehouse off of Loma Rica Drive in Grass Valley. BriarPatch is a proud supporter of Local Culture and has been since the beginning. It’s fun to see how much they have grown. In the last year, they have expanded to many more co-ops and natural food stores in the greater West Coast region!
