Lindsey’s Whole Roasted Garlic-Parmesan Cauliflower

Ingredients

  • 1 head cauliflower 
  • ⅓ cup Field Day Extra Virgin Olive Oil 
  • 3 cloves garlic, minced 
  • ¼ cup grated Parmesan, divided 
  • 1 tsp Italian seasoning blend (or mix basil, parsley & thyme)  
  • ½ tsp sea salt 
  • ¼ tsp black pepper 

Directions

  1. Preheat oven to 400°.
  2. Trim cauliflower, keeping the head intact. In a small bowl, whisk olive oil, garlic, half the Parmesan, herbs, salt and pepper.
  3. Place cauliflower in a Dutch oven or oven-safe dish. Spoon half the mixture into the core, then brush remaining sauce over the top. Cover and roast 35–40 minutes, until tender.
  4. Uncover, sprinkle with remaining Parmesan and broil 3–5 minutes until golden brown. Serve warm as a festive centerpiece.
